Job Summary:
The Vice President of Food and Beverage is responsible for overseeing the strategic planning, development, and management of all food and beverage operations within the organization. This role includes ensuring exceptional guest experiences, maintaining high-quality standards, driving profitability, and aligning food and beverage offerings with the overall brand strategy. The VP will lead a dynamic team, fostering a culture of innovation, sustainability, and excellence in service while focusing on menu development, supplier agreements, procurement, kitchen optimization, and catering optimization.
Key Responsibilities:
1. Strategic Leadership:
- Develop and implement the overall food and beverage strategy in alignment with the company’s vision and goals.
- Analyze market trends and consumer preferences to identify opportunities for growth and innovation.
- Collaborate with executive leadership to create and execute business plans that drive revenue and profitability.
2. Menu Development:
- Lead the development and innovation of menus across all food and beverage outlets, ensuring they meet guest expectations and align with current culinary trends.
- Collaborate with culinary teams to create seasonal and special event menus that enhance guest experiences.
- Conduct taste tests and gather feedback to refine menu offerings.
3. Supplier Agreements and Procurement:
- Establish and maintain relationships with suppliers to ensure the procurement of high-quality ingredients and products at competitive prices.
- Negotiate supplier agreements to secure favorable terms while ensuring compliance with sustainability and quality standards.
- Monitor inventory levels and oversee the procurement process to minimize waste and optimize cost management.
4. Operational Management:
- Oversee all food and beverage operations, ensuring consistency and quality across all venues and offerings.
- Establish and enforce operational standards, policies, and procedures to optimize efficiency and guest satisfaction.
- Monitor and manage food and beverage costs, budgets, and forecasts to achieve financial targets.
5. Kitchen and Catering Optimization:
- Implement best practices for kitchen operations to optimize workflow, enhance productivity, and improve overall efficiency.
- Collaborate with culinary teams to streamline processes, reduce waste, and ensure the highest quality of food preparation.
- Oversee catering operations, ensuring successful execution of events and functions while maximizing revenue opportunities.
6. Team Development:
- Lead, mentor, and develop a high-performing food and beverage team, fostering a culture of excellence, teamwork, and accountability.
- Implement training programs to enhance staff skills and knowledge in food and beverage service, safety, and sanitation.
- Promote career development opportunities and succession planning within the department.
7. Guest Experience:
- Ensure exceptional guest experiences by maintaining high standards of food quality, presentation, and service.
- Gather and analyze guest feedback to continually improve offerings and address any service issues.
- Innovate and refresh menus to reflect seasonal trends, dietary preferences, and emerging culinary practices.
8. Sustainability and Compliance:
- Develop and implement sustainable practices in sourcing, waste management, and community engagement.
- Ensure compliance with health and safety regulations, food handling protocols, and licensing requirements.
- Stay informed on industry trends, regulations, and best practices to maintain a competitive edge.
9. Collaboration and Communication:
- Work closely with marketing and sales teams to develop promotional strategies and initiatives that drive food and beverage revenue.
- Collaborate with other departments to ensure cohesive operations and a unified brand experience.
- Represent the food and beverage division in executive meetings and industry events.
Qualifications:
- Bachelor’s degree in Hospitality Management, Business Administration, Culinary Arts, or a related field; Master’s degree preferred.
- 10+ years of progressive experience in food and beverage management, with at least 5 years in a senior leadership role.
- Proven track record of driving operational excellence and achieving financial targets.
- Strong knowledge of food and beverage trends, culinary techniques, and market dynamics.
- Exceptional leadership, communication, and interpersonal skills.
- Ability to analyze data and make informed decisions to drive business performance.
